Elderflower Champagne

Ronnie and I went on a scavenger hunt today and found some impressive elderflowers at the playground. We started picking in front of a large collective of children and parents enjoying the sunshine and we probably looked a little daft, but I don't care!!

After a little go on the swings and slide we came home and I made a batch of Hugh FW's Elderflower Champagne. It smells lovely! Its just water, sugar, lemon zest and juice, white wine vinegar and elderflower heads. It makes about 2% proof but tastes pretty good in the middle of summer.

So for the mo here is a picture of it beginning to ferment on the kitchen table (using one of Ronnies muslin!) and after a couple of days it should get a bit frothy and foamy!

I will try and get photos as it ferments.

So next time....mouldy elderflowers!
